The Gambero Rosso’s Rome 2011 Guide is published

In Rome, over the past few days, the new edition (to be precise number 21) of the Gambero Rosso Guide to the capital has been presented. The innovation of this year is that for the first time three Roman restaurants have reached the maximum award of Three Forks. The three chefs are Heinz Beck (La Pergola of the Hotel Rome Cavalieri, which gained a total score of 93/100), Salvatore Tassa (Le Colline Ciociare with a score of 91/100) and Anthony Genovese (Il Pagliaccio, score 90/100). The three chefs awarded by the guide also represent three different philosophies of cuisine. Beck with his cuisine mixing Mediterranean inspiration and passion with German technique and perfection has by now been for over a decade among the highest levels of the Capitoline panorama; the other winner, Anthony Genovese, also serves a cuisine that represents a mix of different and apparently distant cultures that derives from his life history (Genovese was born in France of  Italian parents), or rather great French cuisine on one side and solid Calabrian tradition on the other. The third prize winner, on the other hand, Salvatore Tassa, completely represents the final and best declination of the great gastronomical tradition of Rome and the Ciociaria area. The ‘Two Forks' panorama is also interesting, the awarded being given for the first time to no less than five restaurants: L'Antica Pesa, L'Acquolina, Settembrini, Sanlorenzo and La Terrazza of the Hotel Eden, while in the suburbs Marco Bottega (score 81/100) makes his first appearance among the big names. This young chef from L'Aminta in Gennazzano, famous for having participated in the TV programme La Prova del Cuoco (Ready, Steady, Cook in England), trained at the hobs of three great chefs: Alfonso Caputo, Massimo Bottura and Salvatore Tassa. In the wine bars category, the most interesting newcomer is represented by Casa Bleve, awarded Three Bottles, putting itself among the well-established Del Gatto and Roscioli.
